  1. Step 1

    Pre-heat oven to 200C. Place a pot of water on the stovetop and bring to the boil.

  2. Step 2

    Prepare four sheets of aluminium foil and spread with butter or spray with olive oil.

  3. Step 3

    Place cubed potatoes into boiling water. Reduce heat to medium and cook until potatoes have softened.

  4. Step 4

    Place one portion of salmon on each piece of foil, place lemon and lime slices on top.

  5. Step 5

    Fold foil and salmon into a parcel (don’t wrap too tightly – there needs to be airflow around the salmon). Place on a baking tray and place into oven for 15 minutes.

  6. Step 6

    Remove potatoes from heat and strain. Mash potatoes to desired consistency and serve evenly across four plates.

  7. Step 7

    Remove salmon from oven and place on mashed potato. Serve with a mixed leaf salad.
