Grilled Lamb Cutlets and Olive Dip

Servings: 4



  1. Step 1

    Pre-heat oven to 200C and heat a grill or BBQ on high heat.

  2. Step 2

    Line a baking tray with baking paper. Arrange potatoes, carrots and broccoli evenly on tray. Spray or drizzle with olive oil and season. Roast for 20 minutes.

  3. Step 3

    Season the lamb with salt and pepper. Cook for 3 minutes each side or until cooked to your liking. Transfer to a plate and set aside for 5 minutes.

  4. Step 4

    Divide baked vegetables among serving plates. Serve with grilled lamb and olive dip.
