Ham & Cheese Omelette! Breakfast for Dinner.

Servings: 4



  1. Step 1

    Boil salty water for pasta.

  2. Step 2

    While water is boiling/pasta is cooking, crush garlic, squeeze lemon/s, grate/chop lemon rind and poach eggs.

  3. Step 3

    Once pasta is cooked and strained, add olive oil, garlic and lemon rind to pot while it's still hot.

  4. Step 4

    Stir for a couple of minutes.

  5. Step 5

    Add pasta back in and add lemon juice to taste.

  6. Step 6

    Stir through rocket and parmesan.

  7. Step 7

    Top with poached egg to finish.
