Lemon Herb Grilled Chicken with Tzatziki Sauce and Greek Salad

Instructions

Lemon Herb Grilled Chicken

  1. Step 1

    In a bowl, mix the lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper to create a marinade.

  2. Step 2

    Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for at least 30 minutes.

  3. Step 3

    Preheat your grill to medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until they're cooked through.

  4. Step 4

    Remove the chicken from the grill and let it rest for a few minutes before serving.

For Tzatziki Sauce

  1. Step 1

    In a bowl, combine the Greek yogurt, grated and drained cucumber, minced garlic, chopped dill, lemon juice, salt, and black pepper. Mix well.

  2. Step 2

    Refrigerate the Tzatziki sauce until you're ready to serve.

For Greek Salad

  1. Step 1

    In a large bowl, combine the diced cucumber, tomato, Kalamata olives, and crumbled feta cheese.

  2. Step 2

    In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to make the dressing.

  3. Step 3

    Pour the dressing over the salad and toss to combine.
