Lemony Baked Chicken With Veges

There’s nothing like the freshness of lemons. This is a great spring recipe that takes just
minutes to prepare and minutes to cook.



  1. Step 1

    Preheat over to 200C. Zest and juice one lemon. Thinly slice other lemon.

  2. Step 2

    Combine lemon juice and maple syrup in a small bowl. Season with salt and pepper.

  3. Step 3

    Arrange veges in a single layer in a large roasting pan.

  4. Step 4

    Heat a chargrill on high. Coat the chicken in olive oil (or olive oil spray). Season with salt and pepper.

    Cook on the grill for 2 minutes each side or until golden brown.

  6. Step 6

    Place browned chicken over the vegetable mixture in the roasting pan. Place lemon slices over each chicken breast and place in oven.

    Add lemon juice mixture to a small saucepan and bring to the boil.

  8. Step 8

    Remove from heat and pout over the chicken. Remove chicken and vegetables from oven and pour over juice mixture.

  9. Step 9

    Bake for a further 5 minutes or until the chicken is cooking through and the vegetables are tenders.

  10. Step 10

    Sprinkle with lemon zest and serve.
