One-Pan Summer Pasta

  1. Step 1

    Heat salted water in a large saucepan over high heat.

  2. Step 2

    Reduce head to medium, add pasta and simmer as per the packet instructions (or until al dente).

    Add asparagus and sugar snap peas for the final 2 minutes.

  4. Step 4

    Drain and reserve ½ cup of water from the pasta.

  5. Step 5

    Return retained water to the saucepan. Add oil mixture with the parsley and the lemon zest. Heat to a soft boil and remove from the heat.

    Add the pasta to the oil and lemon mixture and toss until coated.

  7. Step 7

    Add the feta and mix to combine.

    Squeeze lemon juice over the pasta and serve.
