Peanut Butter Noodles

Servings: 4



  1. Step 1

    Prepare rice noodles according to packet.

  2. Step 2

    While noodles are softening, mix the tamari, lime juice, peanut butter, garlic and ginger in a small bowl to a paste. If the sauce is too thick, add a tsp or two of water to. Set aside.

  3. Step 3

    Add the oil to a wok or large frypan and place over a high heat.

  4. Step 4

    Once oil is hot, add sugar snap peas, spring onions and carrot into the wok - stir until the spring onion has started to soften.

  5. Step 5

    Add cooked noodles and chicken or prawns (if using) to the pan and reduce heat.

  6. Step 6

    Pour the peanut butter sauce over the noodles in the wok and stir to ensure everything is well-coated.

  7. Step 7

    Serve noodles and top with crushed peanuts or sesame seeds (if you feel like getting fancy!).
