  1. Step 1

    Pre-heat oven grill to a high heat.

  2. Step 2

    Melt the butter in a medium ovenproof frypan over medium heat. Add garlic and cook until fragrant (approximately 30 seconds).

    Add mushrooms, capsicum and Italian herbs. Cook for approximately 4 minutes or until mushrooms are turning golden.

  4. Step 4

    Meanwhile, whisk eggs and season to taste. Pour into the pan and evenly coat.

    Add tomatoes, skin down, and kalamata olives. Space evenly. Cook without stirring for 2 – 3 minutes or until the bottom of the omelette is set.

  6. Step 6

    Scatter the parmesan cheese and place under the oven grill for 2 -3 minutes until golden and set.

    Serve with your favourite salad or some rocket tossed in lemon juice and olive oil.

    Chorizo, salami or good quality ham is also a great addition to this omelette.
