Here’s a new way to enjoy ‘Taco Tuesday’! Using the same method of preparing Mexican mince, we stuff it into the humble spud for a filling midweek meal



  1. Step 1

    Prepare Mexican spice mix by combining all ingredients.

  2. Step 2

    Place potatoes in microwave and cook on high for 10 minutes.

  3. Step 3

    While potatoes are cooking, add olive oil to pan and saute onions until transparent.

  4. Step 4

    Add mince to the pan and cook for approximately 2 minutes. Add spice mix and continue cooking until fragrant and mince is cooked through. Remove from heat.

  5. Step 5

    Once potatoes are cooked, cut in half and scoop out flesh, approximately halfway down the potato.

  6. Step 6

    Spoon mince mixture into the potatoes and top with mashed avocado, cheese and sour cream. Serve with a side salad.
