Ricotta and Cherry Tomato Bruschetta

  1. Step 1

    Pre-heat grill to medium high.

  2. Step 2

    Toast bread by either placing bread on the tray and toast until golden brown. Turn halfway through to make sure both sides are evenly toasted.

  3. Step 3

    While bread is toasting, combine ricotta and 1 tspn of salt and dried herbs.

  4. Step 4

    Remove bread from grill. Spead with ricotta mixture, drizzle with olive oil and return to the grill. Grill for a further 3 to 4 minutes until cheese has blistered.

  5. Step 5

    Meanwhile, combine tomatoes, sugar, apple cider vinegar and garlic in a small bowl. Season with salt and pepper. Stir until well combined.

  6. Step 6

    Remove bread from grill, top evenly with tomato mixture and top with shredded basil.
