Satay Tofu Rice Bowls With Peanut Sauce

This recipe uses all the conveniencies of modern food preparation. Pick up your favourite salad mix, grab a pre-prepared tofu and you’ve got yourself a delicious meat-free meal for the whole family.



  1. Step 1

    Prepare rice using your preferred method.

  2. Step 2

    While rice is cooking, prepare peanut sauce but adding all ingredients (except water) to a small bowl. Mix well to a thick, smooth paste. Add water, one tablespoon at a time, until it reached the desired consistency.

  3. Step 3

    Remove tofu from packaging. Heat oil in a non-stick fry pan and lightly fry until golden brown. Remove from heat.

  4. Step 4

    Prepare salad, leaving out the provided dressing. Chop avocado and add to salad.

  5. Step 5

    Drain rice and add to one third of the bowl. Add salad another third of the bowl.

  6. Step 6

    Chop tofu and add to the final third of the bowl.

  7. Step 7

    Top with a sprinkle of peanuts and roughly chopped or torn coriander.

  8. Step 8

    Serve with generous dollops of peanut sauce.
